Raspberry Vanilla Protein Cakes
Makes about 12 small pancakes
⅓ cup unsweetened almond milk
½ cup almond flour
1 scoop @detoxorganics
3 tbsp coconut flour
½ tsp baking powder
¼ tsp salt
½ cup frozen raspberries
3 tbsp coconut oil or olive oil
Coconut flakes, for topping
Cinnamon, for topping
In a large bowl, whisk together the eggs and almond milk. Add the #almond
flour, Daily Protein, coconut flour, baking powder and salt. Stir until thoroughly combined. Allow the batter to sit for 5 minutes so the flour can absorb the liquid. Stir in the raspberries.
In a large skillet, warm the oil over medium heat. Once the oil is hot and shimmering, scoop small #pancakes
(about 2 tablespoons worth) into the skillet. Cook for 3-4 minutes on each side, or until golden brown.
Served topped with #coconut
flakes, raspberries and a sprinkle of cinnamon.
Store leftovers in the fridge or freezer. Pop them in the toaster for a quick, #protein-packed
